What a stop is
A stop is a doubling or halving of light. Exposure here works the same way: each stop is a factor of two, so +1 doubles the light and −1 halves it.
Because the change is multiplicative, it keeps the relationship between the darks and the brights. A shadow and a highlight both move by the same ratio, which is why exposure feels like a camera and not a flat brightness slider.
When to use it
Use it first, to get the overall level right before anything else in the stack reacts to it. Pushing exposure hard will clip the highlights, so pull it back until the bright areas still carry detail.
