Saturation, and why vibrance matters

Saturation scales every colour away from or toward grey by the same amount. Push it hard and the colours you already had shout.

Vibrance does the same job but leaves already-saturated colours and skin tones alone, so a raised vibrance lifts the quiet colours without over-cooking a face or a red sky.
